  1. In a small, shallow bowl, combine the flour, salt, pepper, garlic powder, onion powder, dried parsley, and paprika, and mix until combined. In another small bowl, whisk together the 2 eggs. In a third bowl, mix together the Panko Breadcrumbs, salt, and pepper. 
  2. Working one at a time, coat each Our Cow Pork Loin Schnitzel in the flour, shaking off any excess. Dip into the egg, then coat evenly in the breadcrumbs 
  3. Add enough vegetable oil to cover the base of the pan (about 0.5 cm deep) so the schnitzels can shallow-fry evenly, and heat the oil over medium-high heat. 
  4. Place the crumbed pork schnitzels in the pan and cook for 3-5 minutes per side, until golden brown and cooked through, to an internal temperature of 60 °C. (Tip: cook in batches so the schnitzels aren’t overcrowded in the frying pan)
  5. Once cooked, place on a wire rack and sprinkle with salt. 
  6. Enjoy!
