Homemade Pork Schnitzels

Ingredients:
- 4 x Our Cow Free Range Pork Loin Schnitzels
- ⅓ cup plain flour
- 1tsp garlic powder
- 1tsp onion powder
- 1tsp paprika
- 1tsp dried parsley
- Salt and pepper
- 2 eggs
- 1 cup panko bread crumbs
- Vegetable oil, for frying
Cooking instructions:
- In a small, shallow bowl, combine the flour, salt, pepper, garlic powder, onion powder, dried parsley, and paprika, and mix until combined. In another small bowl, whisk together the 2 eggs. In a third bowl, mix together the Panko Breadcrumbs, salt, and pepper.
- Working one at a time, coat each Our Cow Pork Loin Schnitzel in the flour, shaking off any excess. Dip into the egg, then coat evenly in the breadcrumbs
- Add enough vegetable oil to cover the base of the pan (about 0.5 cm deep) so the schnitzels can shallow-fry evenly, and heat the oil over medium-high heat.
- Place the crumbed pork schnitzels in the pan and cook for 3-5 minutes per side, until golden brown and cooked through, to an internal temperature of 60 °C. (Tip: cook in batches so the schnitzels aren’t overcrowded in the frying pan)
- Once cooked, place on a wire rack and sprinkle with salt.
