Bacon Wrapped Pork Tenderloin (Gluten Free)

Ingredients:
- 1 x Our Cow Free Range Pork Tenderloins
- 100g Our Cow Nitrite Free Streaky Bacon
- 1 tbsp garlic paste
- 1 tsp brown sugar
- 1 tsp dried rosemary
- Salt and pepper
- 1 ½ tbsp olive oil
- A few fresh rosemary sprigs
Cooking instructions:
- Preheat the oven to 200°C (fan forced).
- Pat the Our Cow Pork Tenderloin completely dry with a paper towel.
- In a bowl, combine the garlic, brown sugar, rosemary, salt, pepper, and olive oil to form a paste. Place the tenderloin on a lined baking tray and rub the mixture evenly all over.
- Lay strips of Our Cow Nitrite Free Streaky Bacon over the tenderloin, wrapping from one side to the other and tucking the ends underneath to secure. Arrange fresh rosemary sprigs around the pork.
- Roast for 25-30 minutes, or until the internal temperature reaches at least 63°C.
- Rest for 5-10 minutes before slicing and serving.
