Mediterranean Sausage Tray Bake (Gluten Free)

Ingredients:
- 1 kg Our Cow Pork Sausages
- 2 zucchinis, sliced
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 red onion, sliced into 2cm wedges
- ¼ cup olive oil
- 1 tbsp garlic paste
- 1 tsp dried oregano
- 200g cherry tomatoes
- 100g feta
- Fresh parsley, chopped
Cooking instructions:
- Preheat the oven to 180°C and line a large baking tray with baking paper.
- Place zucchini, capsicum, red onion, and Our Cow Pork Sausages on the baking tray. Drizzle with olive oil and season with oregano and flaky sea salt. Use your hands to mix until all are coated.
- Bake for 30-35 minutes, mixing halfway.
- Add the tomatoes to the baking tray and return to the oven for 10 minutes, or until softened.
- When ready to serve, sprinkle over feta cheese and fresh parsley.
