Sausage and Broccoli Pasta

Ingredients:
- 500g Our Cow Pork Sausages
- 2 tbsp olive oil
- 2 heads of broccoli
- 1 tbsp minced garlic
- ¼ cup water
- Salt and pepper
- 1 cup parmesan cheese
- 200g penne pasta, uncooked
To serve:
- Parmesan
- Parsely
Cooking instructions:
- Bring a large pot of salted water to the boil. Cook the penne pasta according to the packet directions until al dente, reserving 2 cups of pasta water before draining.
- Heat 1 tbsp olive oil in a large frying pan over medium-high heat. Remove the Our Cow Pork Sausages from the casings and add to the pan. Season with salt and pepper and cook for 8 minutes, breaking them up with a spoon, until browned and cooked through. Remove from the pan and set aside.
- While the sausage is cooking, cut the broccoli into small florets.
- Add the remaining olive oil to the same pan. Add the broccoli, garlic and ¼ cup of water. Cover with a lid and cook for 5 minutes, stirring occasionally, until the broccoli is tender.
- Return the sausage to the pan along with the cooked pasta and parmesan cheese, tossing to combine. Add the reserved pasta water as needed until the sauce is silky and coats the pasta evenly. Season with additional salt and pepper if needed.
- Serve topped with extra parmesan and fresh parsley. Enjoy!
