T Bone Steak with Chips, Green Beans and Peppercorn Sauce

Ingredients:
- 2 x Our Cow Grass Fed T Bone Steaks
- Olive oil
- Olsson’s Red Gum Smoked Salt
Potato chips:
- 3 potatoes
- 2 tbsp olive oil
- Flaky sea salt
Green beans:
- 250g green beans, stalks removed
- 1 tbsp olive oil
- Salt
Peppercorn Sauce
- 1 tbsp butter
- 1 red onion, finely diced
- 2 cloves garlic
- 1 tbsp crushed peppercorns
- 250ml cooking cream
- 100ml beef stock
- 1 tsp Worcestershire sauce
- Salt to taste
Cooking instructions:
- Cut potatoes into fries and place in a large bowl of cold water to soak for 1 hour.
- Use a tea towel to pat the potatoes dry. Add olive oil and salt, and mix to coat.
- Place them in the air fryer and cook for 20 minutes at 200°C, shaking halfway.
- Generously season the Our Cow Grass T Bone Steaks with olive oil and Olsson’s Red Gum Smoked Salt.
- Heat a frying pan over medium-high heat. Cook the steaks for 5 minutes, flip and cook for a further 5 minutes, or until the centre reaches 52°C for medium-rare (or cook to your liking).
- Leave to rest for 10 minutes.
- Heat the olive oil in a frying pan over medium-high heat. Add the green beans, season with salt, and cook for 5-7 minutes, tossing occasionally, until tender with a slight char.
- To make the peppercorn sauce, melt the butter in a saucepan over medium heat. Add the red onion and cook until softened. Add the garlic and crushed peppercorns and cook for a further 1 minute.
- Add the cooking cream, beef stock and Worcestershire sauce. Stir to combine and simmer gently until the sauce has thickened to your desired consistency. Season with salt to taste.
- Serve T-bone steak with chips, beans and a generous amount of peppercorn sauce.
