Steak and Chips with Creamy Mushroom Sauce

Ingredients:
- 2 x Our Cow Grass Fed Rib Fillet / Scotch Fillet Steaks
- Olive oil
- Salt and pepper
Potato chips:
- 3 potatoes
- 2 tbsp olive oil
- Flaky sea salt
Mushroom sauce:
- 250g baby mushrooms, thinly sliced
- 3 tablespoons butter
- 1 ½ teaspoons minced garlic
- ½ cup chicken stock
- 1 cup cooking cream
- 1 teaspoon dijon mustard
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
Cooking instructions:
- Cut potatoes into fries and place in a large bowl of cold water to soak for 1 hour.
- Use a tea towel to pat the potatoes dry. Add olive oil and salt, and mix to coat.
- Place them in the air fryer and cook for 20 minutes at 200°C, shaking halfway.
- Generously season the Our Cow Grass Fed Rib Fillet Steaks with olive oil, salt, and pepper.
- Heat a frying pan over medium-high heat. Cook the steaks for 5 minutes, flip and cook for a further 4 minutes, or until the centre reaches 52°C for medium-rare (or cook to your liking). Remove from the pan and rest for 5-10 minutes, then slice.
- To make the mushroom sauce, melt the butter in a frying pan over medium-high heat. Stir in mushrooms and garlic. Sauté for 3-4 minutes, until the mushrooms are browned.
- Stir in the chicken stock, cream, dijon, worcestershire sauce, salt, and pepper. Continue stirring for 5-8 minutes, or until the sauce has thickened.
- Add chips and cooked steak to a plate, top the steak with mushroom sauce, and add additional salt and pepper.
