Ingredients:
- 500g Our Cow Grass Fed Premium Extra Lean Beef Mince
- ¼ cup hoisin sauce
- ¼ cup rice vinegar
- ¼ cup soy sauce
- 1 heaped tbsp garlic paste
- ½ tbsp ginger paste
Broth:
- 3 cups boiling water
- 3 heaped tsp Gevity Populate Bone Broth Body Glue
- 400ml canned coconut milk
- 2 tbsp natural peanut butter
To serve:
- 4 x microwavable rice cups
- 1 cucumber, diced
- Spring onion, finely chopped
- Coriander, finely chopped
- Sesame seeds
Cooking instructions:
- Prepare the broth by combining the boiling water and Gevity Populate Bone Broth Body Glue in a saucepan. Stir until dissolved, then add the coconut milk and peanut butter. Whisk until smooth and bring to a gentle simmer. Simmer the broth over low heat while preparing the remaining ingredients.
- Heat a large frying pan over medium-high heat. Add the Our Cow Grass Fed Extra Lean Beef Mince and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned and cooked through.
- Prepare the sauce by combining the hoisin sauce, rice vinegar, soy sauce, garlic paste, and ginger paste in a small bowl. Mix well until combined.
- Pour the prepared sauce over the cooked beef mince and stir well to coat. Continue cooking for 3-5 minutes until the beef is well combined and the sauce has reduced.
- Prepare the toppings by dicing the cucumber and finely chopping the spring onion and coriander.
- Heat the rice cups according to packet directions and divide between four bowls. Ladle the broth into the bowls, then spoon the beef mince on top.
- Top with cucumber, spring onion, coriander, and a sprinkle of sesame seeds before serving.
