Beef Liver Tortilla Kebabs

Ingredients:
Tortilla Kebabs
- 500g Our Cow Grass-Fed Beef & Liver Mince
- 8 mini tortillas
- ½ a brown onion, finely diced
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper
Salsa
- 1 large tomato, diced
- 1/4 cup coriander leaves, roughly chopped
- ½ a brown onion, finely diced
- Juice of 1 lime
- Pinch of sea salt
Yoghurt sauce
- ½ cup Greek yogurt
- 1 tbsp olive oil
- ½ tbsp lemon juice
- ½ tbsp minced garlic
- Pinch of salt
- 1 tsp dill
Method:
- In a large bowl, combine the Our Cow Grass-Fed Beef & Liver Mince, brown onion, and seasonings.
- Slightly trim the edges of the tortillas to create squares. Place a thin layer of the mince onto each tortilla and stack them on top of one another.
- Cut the stack in half and stick 2 skewers in each piece. Turn them on their side and push the skewers all the way through. Trim skewers if needed.
- Air fry at 185°C for 26 minutes, flipping halfway.
- While the kebabs are cooking, in a small bowl, combine all ingredients for the salsa, and in another bowl, mix ingredients for the yoghurt sauce.
- Spread the yoghurt sauce in the bottom of a bowl, then add the tortilla kebabs and salsa on top.
- Enjoy!
Note: This recipe will work with any of the Our Cow Minces!
