Method
1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until softened.
2. Add mince, cook until browned, breaking it up with a spoon.
3. Stir in carrot and zucchini. Cook for 3-4 minutes until softened.
4. Add tomato paste, diced tomatoes, tomato sauce, sugar, beef stock, and oregano. Stir well.
5. Season with salt & pepper, reduce heat, and simmer for 20-25 minutes until rich and thick.
6. Meanwhile, cook spaghetti in salted boiling water according to packet instructions. Drain.
7. Toss the pasta with the sauce, or serve the sauce ladled over the top.
8. Finish with parmesan and parsley.
