In a small bowl, combine all ingredients for the sauce and set aside.
Divide the Our Cow Grass-Fed Beef Mince into 4 portions and spread one portion onto each tortilla, spreading it thin. Season with salt, pepper, and paprika.
Heat a saucepan to medium-high and add a drizzle of olive oil.
Add the tortilla to the saucepan, meat side down. Cook for about 3-4 minutes or until the mince is cooked through.
Flip the tortilla, add a slice of cheese, cover, and let it cook for 2 minutes or until the cheese is melted. Remove from the pan and repeat with the remaining tortillas.
Top with Big Mac sauce, then add pickles, lettuce, and diced onion to one half of the tortilla.
Fold over the untopped half to make your quesadilla and cut it in half.
