Satay Chicken Noodle Bowls

Ingredients:

  • 500g Our Cow Free Range Chicken Thigh
  • 3 tbsp satay sauce 
  • 1 ½ tbsp coconut milk 
  • 250g vermicelli rice noodles 
  • 1 cucumber 
  • 1 carrot 
  • Spring onion, sliced 
  • Coriander, chopped
  • Peanuts 
  • Lime 

Dressing:

  • 4 tbsp satay sauce 
  • 2 tbsp coconut milk, or enough to get to your desired consistency


Cooking Instructions:

  1. Add the Our Cow Free Range Chicken Thigh to a bowl along with the satay sauce and coconut milk. Mix and leave in the fridge for 30 minutes. 
  2. Cook vermicelli rice noodles according to the directions.
  3. Heat a pan over medium heat and cook the marinated chicken for 8 minutes, or until cooked through. 
  4. In a small bowl, mix together all ingredients for the dressing
  5. In containers, add the rice noodles, chicken, cucumber, carrot, spring onion, coriander, peanuts, and a wedge of lime. Place the dressing in small separate containers and pour over when you’re ready to eat. 
  6. Enjoy!
