Try this 1 tray meal for dinner this week! The simple honey mustard marinade is a game changer, and chances are you already have all of the ingredients!
Ingredients
- 500g+ Our Cow chicken thighs
- Any selection of chopped veggies you have in the fridge - I added potatoes, sweet potatoes, red onions & halfway through cooking added in broccolini
Honey Mustard Marinade:
- 1/4 cup olive oil
- 1 tbsp Dijon mustard
- 1/2 lemon, squeezed
- 1 tbsp honey
- 2 garlic cloves, minced
- Salt and pepper, to taste
Method
Step 1
Mix up your marinade, and marinate chicken for at least an hour (overnight is even better). Make sure you use chicken thighs, rather than chicken breasts.
Step 2
Add marinated chicken and your selection of chopped veggies onto a sheet pan.
Step 3
Bake at 220 degrees celsius for 30-35 minutes.
