Pork Enchiladas

  • 500g Our Cow Pork Mince
  • 2-3 tbsp Our Cow Mexican Spice Rub (or 1 packet of taco seasoning)
  • 1 tbs olive oil
  • 1 red onion, finely chopped
  • 1 red capsicum, seeded and diced
  • 2 garlic cloves, crushed
  • 1 can red kidney beans, drained and rinsed
  • 1 cup coriander leaves, finely chopped
  • 1pack large wraps (your choice)
  • 1 cup grated cheese
  • Diced avocado, sour cream and salsa to serve


Step 1
Preheat oven to 180°C & Grease a rectangular baking dish.

Step 2
Heat oil in a large pan over medium-high heat. Add onion, capsicum and garlic to pan. Cook stirring occasionally until soft.

Step 3
Add pork mince. Break up lumps with a wooden spoon and cook until lightly browned. Stir in Our Cow Mexican Spice Rub (or taco seasoning), ½ cup water & beans, cook for 2 minutes. Remove from heat.

Step 4
Stir through coriander. Season with salt and pepper to taste.

Step 5
Spoon 1 ½ cups pork mixture over the base of baking dish.

Step 6
Place ½ cup pork mixture onto the centre of each tortilla, roll up and arrange in baking dish. Sprinkle with cheese.

Step 7
Bake for 15-20 minutes or until cheese is melted.

Step 8
Serve with avocado, sour cream, coriander and salsa!
