Hot Honey Chicken Schnitzel Sandwich

Ingredients
- Our Cow Free Range Southern Chicken Breast Schnitzel
- 20g butter
- 3 tbsp hot honey
- 4 slices of bread
- ¼ cup Parmesan cheese
- Cos lettuce leaves
Sauce:
- 2 tbsp mayonnaise
- 2 tbsp Greek yoghurt
- 1 tsp minced garlic
- 1 tbsp dried parsley
- 2 tbsp Parmesan cheese, finely grated
- Salt and pepper
Cooking instructions:
- Place the Our Cow Free Range Southern Chicken Breast Schnitzels in the air fryer and cook for 10-12 minutes per side, until golden and cooked through.
- Once the schnitzels are almost cooked, add butter and hot honey to the frying pan over medium heat. Once the butter has melted and the mixture is bubbling, add the cooked chicken schnitzels to the pan and coat them in the sticky hot honey mixture. Let them cook for 1-2 minutes per side to caramelise slightly.
- In a small bowl, combine the mayonnaise, Greek yoghurt, minced garlic, dried parsley, finely grated parmesan, and a pinch of salt and pepper.
- Spread the sauce over the bread slices.
- Layer Cos lettuce on the bread, then place the hot honey schnitzel on top, along with Parmesan cheese.
- Sandwich together, slice in half, and enjoy!
