Chicken Caesar Pasta Salad

Ingredients:
- 500g Our Cow Free Range Diced Chicken Breast
- 6 slices Our Cow Nitrate Free Shortcut Bacon
- 1 head of cos lettuce
- 2 cups penne pasta, cooked
- 4 eggs, boiled
- ½ cup parmesan cheese
Croutons:
- 3 slices of bread
- Olive oil
- Salt and pepper
Dressing:
- ½ cup mayo
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tbsp minced garlic
- Salt/pepper
- ¼ cup parmesan cheese
Method:
- Heat a fry pan to medium and add a drizzle of olive oil. Add the Our Cow Free Range Diced Chicken Breast, onion powder, garlic powder, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove from heat and set aside.
- To the same pan, add the Our Cow Nitrate Free Shortcut Bacon and cook until crispy and golden. Remove the item from the pan and set it aside.
- Chop the bread into bite-sized pieces, then place them in the air fryer with a drizzle of olive oil and a sprinkle of salt. Air fry at 180°C for 10 minutes, mixing halfway.
- In a small bowl, combine all ingredients for the dressing.
- To a large salad bowl, add the cos lettuce, cooked pasta, chicken, bacon, eggs, croutons, parmesan cheese, and dressing.
- Mix, serve, and enjoy!
