Maple Bacon Pancakes

Ingredients:
- 150g Our Cow Nitrite Free Streaky Bacon
- 2 tbsp brown sugar
- 2 cups plain flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 1 ½ cups milk
- Butter, for cooking pancakes
- Maple syrup, to serve
Method:
- Preheat oven to 180°C. Line a baking tray with baking paper and lay the Our Cow Nitrite Free Streaky Bacon rashers on it. Sprinkle with 1 tbsp of brown sugar and bake for 10 minutes. Flip each rasher, sprinkle with 1 tbsp brown sugar, and bake for another 10 minutes.
- In a bowl, combine the flour, sugar, baking powder, and cinnamon. Add the eggs and milk, then mix until the batter is smooth.
- Melt a little butter in a large non-stick frying pan over medium-high heat. Pour in some batter and cook for 1-2 minutes, or until small bubbles appear. Flip and cook until the pancake is golden and cooked through. Repeat with the remaining batter.
- To serve, add pancakes to a plate and top with bacon rashers and a generous drizzle of maple syrup.
