Maple Bacon Pancakes

Maple Bacon Pancakes

Ingredients:

  • 150g Our Cow Nitrite Free Streaky Bacon 
  • 2 tbsp brown sugar
  • 2 cups plain flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 2 eggs
  • 1 ½ cups milk
  • Butter, for cooking pancakes 
  • Maple syrup, to serve

Method:

  1. Preheat oven to 180°C. Line a baking tray with baking paper and lay the Our Cow Nitrite Free Streaky Bacon rashers on it. Sprinkle with 1 tbsp of brown sugar and bake for 10 minutes. Flip each rasher, sprinkle with 1 tbsp brown sugar, and bake for another 10 minutes. 
  2. In a bowl, combine the flour, sugar, baking powder, and cinnamon. Add the eggs and milk, then mix until the batter is smooth. 
  3. Melt a little butter in a large non-stick frying pan over medium-high heat. Pour in some batter and cook for 1-2 minutes, or until small bubbles appear. Flip and cook until the pancake is golden and cooked through. Repeat with the remaining batter. 
  4. To serve, add pancakes to a plate and top with bacon rashers and a generous drizzle of maple syrup. 
  5. Enjoy!
