Steak and Caramelised Onion Sandwich

Ingredients:
- 2 x Our Cow Grass-Fed Blade Steaks
- Salt and pepper
- Olive oil
- 1 cibatta loaf
- 2 slices of cheese
- 2 handfuls of rocket
Caramelised onions:
- 1 tbsp olive oil
- 2 brown onions
- 1 tbsp white wine vinegar
- 2 tbsp brown sugar
Garlic aioli:
- ⅓ cup mayo
- 1 tbsp minced garlic
- ½ tbsp lemon juice (fresh is best)
- ½ tbsp olive oil
- Salt and pepper
Method:
- Thinly slice brown onions. Heat oil in a fry pan over medium heat. Add onions and cook for 10 minutes or until browned, stirring occasionally. Add the brown sugar and white wine vinegar, mix, and cook for 3 minutes, or until the onions are caramelised, stirring occasionally. Set aside.
- Season the Our Cow Blade Steak with salt and pepper, and cook in a pan over medium-high heat until it reaches your desired doneness. Set aside to rest.
- Slice the ciabatta, place a slice of cheese on one side, and leave it under the grill until the cheese is melted and the bread is toasted.
- In a small bowl, mix ingredients for the garlic aioli.
- Add the steak, caramelised onions, rocket, and aioli to the toasted ciabatta and cheese. Season with salt and pepper.
