Mexican Loaded Hot Dogs

Ingredients
- 6 x Our Cow Grass Fed & Organic Beef Hotdogs
- 6 hot dog buns
- Grated cheese
- Sour cream
Guacamole:
- 2 avocados
- Juice of ½ a lime
- Salt and pepper
Pico de Gallo:
- 2 tomatoes, diced
- ⅓ cup coriander, finely chopped
- ½ a red onion, diced
- 1 tbsp olive oil
- Juice of ½ a lime
- Salt and pepper
Cooking instructions:
- To make the guacamole, add the avocado, lime juice, salt and pepper to a bowl. Mash until smooth and set aside.
- To make the pico de gallo, combine the diced tomatoes, coriander, red onion, olive oil, lime juice, salt and pepper in a bowl. Mix well and set aside.
- Heat a frying pan over medium heat. Cook the Our Cow Grass Fed & Organic Beef Hot Dogs for 8 minutes, turning occasionally, until heated through.
- While the hot dogs are cooking, lightly toast the hot dog buns.
- Place each hot dog in a bun and sprinkle generously with grated cheese.
- Top with a spoonful of guacamole, a generous amount of pico de gallo, and a dollop of sour cream.
- Enjoy!
