Mexican Loaded Hot Dogs

Ingredients 

Guacamole:

  • 2 avocados
  • Juice of ½ a lime
  • Salt and pepper 

Pico de Gallo:

  • 2 tomatoes, diced
  • ⅓ cup coriander, finely chopped 
  • ½ a red onion, diced
  • 1 tbsp olive oil
  • Juice of ½ a lime 
  • Salt and pepper 


Cooking instructions:

  1. To make the guacamole, add the avocado, lime juice, salt and pepper to a bowl. Mash until smooth and set aside.
  2. To make the pico de gallo, combine the diced tomatoes, coriander, red onion, olive oil, lime juice, salt and pepper in a bowl. Mix well and set aside.
  3. Heat a frying pan over medium heat. Cook the Our Cow Grass Fed & Organic Beef Hot Dogs for 8 minutes, turning occasionally, until heated through. 
  4. While the hot dogs are cooking, lightly toast the hot dog buns.
  5. Place each hot dog in a bun and sprinkle generously with grated cheese.
  6. Top with a spoonful of guacamole, a generous amount of pico de gallo, and a dollop of sour cream.
  7. Enjoy!
