This recipe came straight out of Ma’s cook book (Bianca’s grandmother). She is one of the best cooks in the Mid North Coast and still has her hills hoist we all swung off as kids!
Ingredients:
1–2 tablespoons olive oil
1 large onion, chopped
3 medium carrots, sliced
1 kg diced beef, tossed in seasoned flour
1 ¼ cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon tomato sauce
2 teaspoons soy sauce
2 tablespoons lemon juice
1 cup beans, chopped
2 tablespoons plum jam
Method:
1. Preheat oven to a moderate 180°C. Heat a large ovenproof heavy-based pan over medium heat and add oil, onion and carrot. Cook for 3–4 min. Set aside.
2. Add a little more oil if needed and brown meat in batches. Return all meat and onions to pan and add stock, sauces and lemon juice.
3. Cover and transfer to the oven. Bake for 45 min. Add beans and plum jam and cook for a further 15–20 min. Serve with mashed potato or rice.
