Lemon Prawn Pasta

Ingredients:
- 500g Our Cow Wild Caught Ocean King Prawns
- 40 g butter
- 3 tbsp olive oil
- 2 shallots, diced
- 1 tbsp garlic paste
- ¼ cup fresh basil, chopped
- ¼ cup fresh parsley, chopped
- 1 punnet of cherry tomatoes, halved
- Zest of 1 lemon
- Juice of ½ a lemon
- 2 tbsp white wine vinegar
- Salt and pepper
- 350g linguine, uncooked
Cooking instructions:
- Peel the Our Cow Wild Caught Ocean King Prawns and rinse well.
- Cook linguine until al dente, reserving ½ a cup of pasta water.
- Heat a large saucepan over medium heat and add the butter and olive oil. Once it has melted, cook the shallots and garlic until fragrant. Mix in fresh basil and parsley.
- Add in the cherry tomatoes, lemon juice and zest, and season well. Let the tomatoes cook for 4-5 minutes, then add in the white wine vinegar and prawns and cook until the prawns have heated through.
- Add the cooked linguine along with the reserved pasta water and mix well.
- Serve in bowls and garnish with fresh herbs. Enjoy!
