Lemon Prawn Pasta

Lemon Prawn Pasta

Ingredients:

  • 500g Our Cow Wild Caught Ocean King Prawns
  • 40 g butter
  • 3 tbsp olive oil
  • 2 shallots, diced
  • 1 tbsp garlic paste 
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • 1 punnet of cherry tomatoes, halved
  • Zest of 1 lemon 
  • Juice of ½ a lemon
  • 2 tbsp white wine vinegar
  • Salt and pepper
  • 350g linguine, uncooked 


Cooking instructions:

  1. Peel the Our Cow Wild Caught Ocean King Prawns and rinse well. 
  2. Cook linguine until al dente, reserving ½ a cup of pasta water. 
  3. Heat a large saucepan over medium heat and add the butter and olive oil. Once it has melted, cook the shallots and garlic until fragrant. Mix in fresh basil and parsley.
  4. Add in the cherry tomatoes, lemon juice and zest, and season well. Let the tomatoes cook for 4-5 minutes, then add in the white wine vinegar and prawns and cook until the prawns have heated through. 
  5. Add the cooked linguine along with the reserved pasta water and mix well. 
  6. Serve in bowls and garnish with fresh herbs. Enjoy!
