Grass Fed Lamb Burgers

Ingredients:
- 4 x Our Cow Lamb Burger Patties
- Olive oil
- 4 burger buns
- 4 slices of Swiss cheese
- 1 avocado, mashed
- Cos lettuce
- 1 tomato, sliced
- ½ a red onion, thinly sliced
- 4 tbsp tomato relish
- 4 tbsp herbed mayo
- Salt and pepper
Cooking instructions:
- Heat a frying pan over medium-high heat. Add a drizzle of olive oil and add Our Cow Lamb Burgers.
- Cook the burgers for 4-5 minutes per side, or until cooked through. In the final minute of cooking, top each burger with a slice of Swiss cheese and allow it to melt.
- While the burgers are cooking, lightly toast the burger buns.
- Spread the herbed mayo on the base of each bun. Top with cos lettuce, mashed avocado, tomato slices, and red onion.
- Place the cheesy lamb burger on top, then spoon the tomato relish over it, and season with salt and pepper. Finish with the top of the bun and serve immediately.
