Creamy Beef Bacon Pasta

Ingredients:
- 200g Our Cow Grass Fed, Nitrite Free Beef Bacon
- 200g Spaghetti
- 1 shallot, finely diced
- 1 tbsp garlic paste
- 200ml cooking cream
- Salt and pepper
- 1 cup Parmesan cheese
- Fresh parsley, to serve
Cooking instructions:
- Bring a large pot of salted water to the boil. Cook the spaghetti according to the packet directions until al dente, reserving 1 cup of pasta water before draining.
- Meanwhile, dice the Our Cow Grass Fed, Nitrite Free Beef Bacon. Heat a large frying pan over medium heat, add the beef bacon and cook for 5 minutes, stirring occasionally, until golden and crispy. Remove from the pan.
- Add the diced shallot and garlic paste to the pan and cook for 2-3 minutes until softened.
- Reduce the heat to low, then pour in the cooking cream and ½ cup of reserved pasta water. Season with salt and pepper and cook for 2 minutes.
- Add the remaining pasta water and simmer for 2-3 minutes or until thickened. Stir in the Parmesan cheese until fully incorporated.
- Mix in the cooked beef bacon, add the cooked spaghetti and toss well to coat.
- Taste and adjust seasoning if needed. Serve topped with fresh parsley.
