Cheesy Sausage and Gnocchi Bake

Ingredients:
- 500g Our Cow Grass Fed Beef Honey, Herb & Garlic Sausages
- 2 tbsp olive oil
- 1 brown onion, diced
- 1 tbsp garlic paste
- ¼ cup beef stock
- 400g crushed tomatoes
- ½ cup water
- Salt and pepper
- A large handful of baby spinach, chopped
- ¾ cup parmesan cheese
- 200g fresh mozzarella, sliced
To serve:
- Fresh basil
Cooking instructions:
- Preheat oven to 180°C. Heat an oven-safe casserole dish over medium heat and add the olive oil. Sauté the onion until translucent.
- Remove the casing from the Our Cow Grass Fed Beef Honey, Herb & Garlic Sausages, add them to the pot, and use a wooden spoon to break them up. Cook with the onion for 8 minutes or until the sausages are cooked through.
- Add the garlic paste and stir to combine. Then add in the beef stock, water, and crushed tomatoes, and stir to incorporate. Allow it to simmer for 2-3 minutes, then remove from the heat.
- Stir in a ¼ cup of Parmesan cheese. Add the spinach and uncooked gnocchi. Stir well to ensure the gnocchi is coated in the sauce.
- Sprinkle the rest of the parmesan cheese over, then top with slices of fresh mozzarella.
- Place in the oven, uncovered, for 25-30 minutes or until golden brown.
- Serve in bowls with fresh basil leaves. Enjoy!
