Cheesy Sausage and Gnocchi Bake

Cooking instructions:

  1. Preheat oven to 180°C. Heat an oven-safe casserole dish over medium heat and add the olive oil. Sauté the onion until translucent. 
  2. Remove the casing from the Our Cow Grass Fed Beef Honey, Herb & Garlic Sausages, add them to the pot, and use a wooden spoon to break them up. Cook with the onion for 8 minutes or until the sausages are cooked through. 
  3. Add the garlic paste and stir to combine. Then add in the beef stock, water, and crushed tomatoes, and stir to incorporate. Allow it to simmer for 2-3 minutes, then remove from the heat.
  4. Stir in a ¼ cup of Parmesan cheese. Add the spinach and uncooked gnocchi. Stir well to ensure the gnocchi is coated in the sauce. 
  5. Sprinkle the rest of the parmesan cheese over, then top with slices of fresh mozzarella. 
  6. Place in the oven, uncovered, for 25-30 minutes or until golden brown. 
  7. Serve in bowls with fresh basil leaves. Enjoy!
