Beef Tortellini Soup

Ingredients:
- 500g Our Cow Grass Fed Beef Mince
- 2 tbsp olive oil
- Salt and pepper
- 1 brown onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery sticks, sliced
- 410g crushed tomatoes
- 1 tbsp tomato paste
- ½ tsp paprika
- 1 tsp lightly dried parsley
- 4 cups salt-reduced beef stock
- 1 cup water
- 2 tsp cornflour
- 300g tortellini
- 300ml cooking cream
- 1 large handful of baby spinach
To serve:
- Parmesan
- Parsely
Cooking instructions:
- Heat 1 tbsp olive oil in a large pot over medium-high heat. Add the Our Cow Grass Fed Beef Mince, season with salt and pepper, and cook until browned. Remove from the pot and set aside.
- Add the remaining olive oil to the pot. Add the onion, garlic, carrot and celery, and cook for 5-6 minutes, stirring occasionally until softened.
- Stir in the crushed tomatoes, tomato paste, paprika and parsley. Return the cooked mince to the pot and pour in the beef stock and water. Bring to a boil, then reduce to a simmer for 15 minutes.
- In a small bowl, whisk the cornflour with 2 tsp of cold water until smooth. Stir into the soup and simmer for 2 minutes, until slightly thickened.
- Add the tortellini and cook according to packet directions, or until tender.
- Stir through the cooking cream and baby spinach. Cook for 2 minutes until the spinach has wilted. Taste and adjust seasoning if needed.
- Serve topped with parmesan and parsley. Enjoy!
