Beef Tortellini Soup

Beef Tortellini Soup

Ingredients:

  • 500g Our Cow Grass Fed Beef Mince 
  • 2 tbsp olive oil 
  • Salt and pepper 
  • 1 brown onion, diced 
  • 3 garlic cloves, minced
  • 2 carrots, sliced 
  • 2 celery sticks, sliced 
  • 410g crushed tomatoes 
  • 1 tbsp tomato paste
  • ½ tsp paprika 
  • 1 tsp lightly dried parsley 
  • 4 cups salt-reduced beef stock
  • 1 cup water 
  • 2 tsp cornflour
  • 300g tortellini 
  • 300ml cooking cream 
  • 1 large handful of baby spinach

To serve:

  • Parmesan 
  • Parsely 


Cooking instructions:

  1. Heat 1 tbsp olive oil in a large pot over medium-high heat. Add the Our Cow Grass Fed Beef Mince, season with salt and pepper, and cook until browned. Remove from the pot and set aside.
  2. Add the remaining olive oil to the pot. Add the onion, garlic, carrot and celery, and cook for 5-6 minutes, stirring occasionally until softened.
  3. Stir in the crushed tomatoes, tomato paste, paprika and parsley. Return the cooked mince to the pot and pour in the beef stock and water. Bring to a boil, then reduce to a simmer for 15 minutes. 
  4. In a small bowl, whisk the cornflour with 2 tsp of cold water until smooth. Stir into the soup and simmer for 2 minutes, until slightly thickened.
  5. Add the tortellini and cook according to packet directions, or until tender.
  6. Stir through the cooking cream and baby spinach. Cook for 2 minutes until the spinach has wilted. Taste and adjust seasoning if needed.
  7. Serve topped with parmesan and parsley. Enjoy!
