Breakfast Sausage Tray Bake

Ingredients:
- 2 x Our Cow Grass Fed Beef Honey, Herb & Garlic Sausages
- 2 large potatoes, diced
- Olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- Salt and pepper
- 250g truss cherry tomatoes
- 100g mushrooms, sliced
- 2 eggs
- Fresh parsley, to garnish
Cooking instructions:
- Preheat your oven to 180°C. Dice the potatoes into small, even cubes and toss them in a bowl with olive oil, garlic powder, onion powder, dried parsley, salt, and pepper. Spread them out on a lined baking tray and roast for 20 minutes.
- Add the Our Cow Grass Fed Honey, Herb and Garlic Sausages, mushrooms, and cherry tomatoes to the tray, drizzle with a little more olive oil, and return to the oven for another 15-20 minutes, or until the sausages are cooked through.
- Make two small holes in the tray and crack an egg into each. Put the tray back in the oven for about 5-8 minutes, depending on how you like your eggs cooked.
- Finish by sprinkling fresh parsley over the top.
