Beef Mince and Lentil Curry

Ingredients:

- 500g beef mince

- 1 onion, chopped

- 2 garlic cloves, minced

- 1 tbsp ginger, grated

- 2 tbsp curry powder

- 1 can diced tomatoes (400g)

- 1 cup beef stock

- 1 cup red lentils, rinsed

- 1 cup coconut milk

- Salt and pepper to taste

- Cooked rice (for serving)

- Fresh coriander (for garnish)

Method:

1. Cook onion, garlic, and ginger in a large pot until softened.

2. Add beef mince and cook until browned.

3. Stir in curry powder and cook for 1 minute.

4. Add tomatoes, beef stock, lentils, and coconut milk. Simmer for 25-30 minutes until lentils are tender.

5. Season with salt and pepper.

6. Serve with rice, garnished with fresh coriander.
