Beef Massaman Curry

Ingredients:
- 500g Our Cow Grass Fed Beef Chuck Steak
- 1tbsp olive oil
- 1 brown onion, sliced
- ⅓ cup massaman curry paste
- 4 white potatoes, cut into 3cm pieces
- 1tbsp brown sugar
- 400 ml coconut cream
- 1 cup of rice, uncooked
To serve:
- Peanuts, chopped
- Coriander
- Chilli, thinly sliced
Cooking instructions:
- Heat a frying pan over medium-high heat and add the olive oil. Dice the Our Cow Grass Fed Beef Chuck Steak into 3cm pieces. Add it to the fry pan and turn occasionally for 3 minutes, or until browned. Transfer to the bowl of your slow cooker.
- Add the onion to the frying pan and cook for 2 minutes, or until slightly softened. Add to your slow cooker along with the potatoes, curry paste, brown sugar, fish sauce, and coconut cream.
- Mix, cover with the lid, and cook on low for 7 hours or until beef and potatoes are tender.
- Cook rice as per the packet directions.
- Divide rice among the bowls, top with the beef, and garnish with chopped peanuts, coriander, and chilli.
