Baked Salmon and Feta Pasta

Ingredients:
- 2 x Our Cow Wild Caught Sockeye Salmon
- 200g feta cheese
- 2 large handfuls of baby spinach
- 1 punnet of cherry tomatoes
- 4 garlic cloves
- 2 tsp onion powder
- Salt and pepper
- 3 tbsp olive oil
- 2 tbsp basil pesto
- 100 g fettuccine
- Grated parmesan, to serve
Cooking instructions:
- Preheat oven to 180°C
- To a large oven-safe dish, add the Our Cow Wild Caught Sockeye Salmon, feta, baby spinach, cherry tomatoes, garlic and seasonings. Drizzle with a generous amount of olive oil (about 3 tbsp).
- Bake for 25 minutes or until the salmon is cooked and the tomatoes are tender.
- Cook fettuccine as per directions until al dente, reserving ½ cup pasta water
- Add Basil pesto to the cooked salmon and mash everything together. Add the pasta and the reserved pasta water, then mix to combine.
- Serve in bowls and top with parmesan cheese. Enjoy!
