Ingredients:

Dressing

  • Juice of 1 lemon
  • Drizzle of olive oil (approx. 1 ½ tbsp)
  • Flaky Sea Salt

Method:

  1. Peel and rinse prawns. Chop into bite-sized pieces. 
  2. In a large salad bowl, add prawns, mango, avocados, cucumber, shallots, coriander, lemon juice, olive oil, and salt. 
  3. Toss everything together to combine. 
  4. Enjoy!
