Teriyaki Chicken Sushi Bowl

Ingredients:
- 500g Our Cow Free Range Chicken Thigh
- ½ cup teriyaki marinade
- 1 cup sushi rice, uncooked
- 1 tbsp sushi seasoning
- 1 cucumber
- 1 avocado
- Cos lettuce
- 250g edamame beans
To serve:
- Kewpie mayonnaise
- Sesame seeds
- Seaweed
Cooking instructions:
- Add the Our Cow Free Range Chicken Thigh to a bowl along with the teriyaki marinade. Mix and leave in the fridge for 30 minutes.
- Cook sushi rice as per directions. Once cooked, mix through the sushi seasoning and set aside.
- Heat a pan over medium heat and cook the marinated chicken thigh for 8 minutes, or until cooked through.
- In containers, add the rice, lettuce, chicken, cucumber, avocado, and edamame beans. Finally, top with Kewpie mayonnaise, sesame seeds, and some seaweed.
- Enjoy!
Tip: You can marinate the chicken overnight if you’d prefer a deeper flavour.
