"Marry Me" Chicken Gnocchi

Ingredients:
- 250g Our Cow Free Range Chicken Breast
- Salt and pepper
- 1 tbsp oil from sun-dried tomatoes
- 1 tbsp minced garlic
- 1 tsp dried thyme
- 1/2 cup sundried tomatoes
- 1/2 cup cooking cream
- 1 cup chicken stock
- 500g gnocchi (uncooked)
- 60g baby spinach
- 1/2 cup grated parmesan cheese, plus more to serve
- A handful of basil leaves
Method:
- Dice the Our Cow Chicken Breast. Heat the sun-dried tomato oil in a large pan over medium-high heat. Add the chicken, season with salt and pepper, and cook for 4-5 minutes per side, or until golden and cooked through. Remove from the pan and set aside.
- In the same pan, reduce the heat to medium. Add the minced garlic and dried thyme. Sauté for 30 seconds until fragrant. Stir in the sun-dried tomatoes, cooking cream, and chicken stock. Bring to a simmer.
- Add the uncooked gnocchi directly into the sauce. Stir well, cover, and simmer for 5 minutes, or until the gnocchi is tender.
- Add the chicken to the pan along with the baby spinach and parmesan cheese.
- Stir, reduce the heat to low, and let it simmer for a few minutes to thicken the sauce. Finally, stir through some chopped basil leaves.
- Serve in bowls along with some extra Parmesan cheese and fresh basil.
