Maple Bacon Cinnamon Scrolls

Ingredients


Maple Bacon:


Cinnamon Scrolls:

  • 2 1/3 cups plain flour
  • 1/4 cup brown sugar
  • 7g packet instant dried yeast
  • 3/4 cup milk, warmed to 49°C - 54°C
  • 1 egg, at room temp

Filling:

  • 70g butter, softened 
  • ⅓ cup brown sugar, tightly packed 
  • Cinnamon

Before baking:

  • ¼ cup milk, for brushing

Cream Cheese Icing:

  • 250g cream cheese, at room temp
  • 50g butter, softened
  • ½ cup icing sugar 
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup

Cooking instructions:

  1. Place the flour, sugar, and salt in a stand mixer with the dough hook attachment. Mix to combine. Add the yeast and mix to combine. Warm the milk in the microwave, then whisk it together with the egg. Add to the flour mixture and knead on medium speed for 4 minutes until a smooth dough forms. 
  2. Transfer to a lightly floured benchtop and knead into a smooth ball. Place dough in a greased bowl, cover with cling film and leave in a warm place for 2 hours.
  3. Grease the base of a large pan and line with baking paper.
  4. On a lightly floured sheet of baking paper, roll the pastry out to a 44cm x 30cm rectangle, with the longest side closest to you. Spread with the butter, brown sugar, and cinnamon, then roll from the top down into a tight scroll. Use kitchen string to cut the log into 12 slices. Arrange scrolls in the pan, leaving a 1cm gap between each. Cover with a tea towel and leave to rest in a warm place for 1 hour.
  5. To make the maple bacon, preheat the oven to 180°C and line a baking tray. Combine the maple syrup and brown sugar in a large bowl, then coat each slice of Our Cow Free Range Wood Smoked Bacon in the mixture. Place on the lined baking tray and bake for 30-40 minutes or until bacon is browned and crispy. 
  6. Transfer bacon to a wire rack to cool completely. 
  7. Brush each scroll with milk, then bake for 20 minutes or until golden brown. Set aside to cool slightly. 
  8. While the scrolls are cooking, make the icing by placing all ingredients in a stand mixer with the paddle attachment and beating until smooth and fluffy.
  9. Dice maple bacon into small bits. 
  10. Spread the scrolls with icing and top with bacon
  11. Enjoy!
