Loaded Steak Fajita Sweet Potato Nachos

Ingredients:


Steak fajita topping:

Homemade fajita seasoning:

  • ½ tsp chilli powder
  • ½ tbsp cumin
  • 1 tsp garlic powder 
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp dried oregano 
  • Pinch of salt 

Sweet potatoes:

  • 2 large sweet potatoes
  • Olive oil
  • Salt and pepper 

Guacamole:

  • 2 avocados
  • Juice of ½ a lime
  • Salt and pepper 

For assembly:

  • Shredded mozzarella 
  • Sour cream 
  • Coriander 
  • Lime juice


Cooking instructions:

  1. Preheat oven to 200°C and line two baking trays with baking paper.
  2. Slice the sweet potatoes into thin rounds, arrange on the lined trays, drizzle with olive oil, and season with salt and pepper. Bake for 25-30 minutes, turning halfway, until golden and tender.
  3. While the sweet potatoes are cooking, pat the Our Cow Grass Fed Sirloin Steaks dry, drizzle with olive oil, and season with Olsson's Red Gum Smoked Salt. Heat a large frying pan over high heat and cook the steaks for 4-5 minutes per side, or until cooked to your liking. Remove from the pan and rest before slicing.
  4. Prepare the fajita seasoning by combining the chilli powder, cumin, garlic powder, onion powder, paprika, dried oregano, and a pinch of salt in a small bowl. 
  5. Thinly slice the red capsicum, yellow capsicum, brown onion, and red onion. Add a drizzle of olive oil to the same pan used for the steak and cook the vegetables over medium-high heat for 5-7 minutes until softened and slightly charred. Add the fajita seasoning and garlic paste, mix well, and cook for another 2-3 minutes. 
  6. Mash the avocados with lime juice, salt, and pepper to make the guacamole, and chop the coriander. Thinly slice the steak.
  7. Once the sweet potatoes are cooked, arrange them on plates. Top with the fajita mixture, sliced steak, shredded mozzarella, guacamole, sour cream, fresh coriander, and an extra squeeze of lime juice before serving.
