Method
Prep the ribs
Pat the ribs dry and season generously with salt, pepper, and smoked paprika.
Sear for flavour
Heat olive oil in a large pan and sear ribs on all sides until browned. This locks in flavour.
Build the sauce
In the same pan, sauté the onion and garlic until fragrant. Stir in tomato paste, Worcestershire sauce, sugar or honey, and BBQ sauce. Add beef stock and bring to a simmer.
Slow cook
Transfer ribs and sauce to a slow cooker. Cook on low for 6–8 hours or on high for 4–5 hours until the meat is fall-off-the-bone tender.
Finish in the oven (Jayme’s tip!)
Preheat oven to 200°C. Place ribs on a baking tray, brush with extra BBQ sauce, and roast for 10–15 minutes until caramelised and sticky.
Serve & enjoy
Plate up with mashed potatoes, rice, or a fresh slaw. Don’t forget napkins – it’s a hands-on kind of meal!
