Grilled Beef Kebabs with Tzatziki  Flatbread

Ingredients:

  • Oil, for cooking
  • 500g Grass-Fed Beef Mince
  • 1 Red Onion, diced
  • 1 Garlic Clove, minced
  • 2 tbsp Fresh Mint, finely chopped
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1⁄2 tsp Cinnamon
  • 1⁄2 tsp Salt
  • 1⁄4 tsp Pepper
  • 2 small Pita Breads, toasted
  • 2 tbsp Tzatziki, drizzled
  • Lime Wedges, to serve

Slaw

  • 2 handfuls Mixed Lettuce Leaves
  • 1⁄4 Red Cabbage
  • 1⁄4 Green Cabbage
  • 1 Carrot
  • 1 cup Parsley
  • 1⁄4 Red Onion, thinly sliced
  • 2 tbsp Mayonnaise
  • 2 tbsp Pumpkin Seeds

Method:

  1. Combine mince, red onion, garlic, mint, cumin, oregano, paprika, cinnamon, salt and pepper in a bowl. Divide mixture amongst skewers, using your hands to create a kebab shape on each skewer.
  2. Heat a frying/grill pan and coat with oil. Place skewers and cook, rotating until all sides are browned.
  3. Meanwhile, combine slaw ingredients and set aside.
  4. Serve skewers topped with tzatziki alongside salad, pita bread and lime wedges.
