Grilled Beef Kebabs with Tzatziki Flatbread

Ingredients:
- Oil, for cooking
- 500g Grass-Fed Beef Mince
- 1 Red Onion, diced
- 1 Garlic Clove, minced
- 2 tbsp Fresh Mint, finely chopped
- 1 tsp Cumin
- 1 tsp Oregano
- 1 tsp Paprika
- 1⁄2 tsp Cinnamon
- 1⁄2 tsp Salt
- 1⁄4 tsp Pepper
- 2 small Pita Breads, toasted
- 2 tbsp Tzatziki, drizzled
- Lime Wedges, to serve
Slaw
- 2 handfuls Mixed Lettuce Leaves
- 1⁄4 Red Cabbage
- 1⁄4 Green Cabbage
- 1 Carrot
- 1 cup Parsley
- 1⁄4 Red Onion, thinly sliced
- 2 tbsp Mayonnaise
- 2 tbsp Pumpkin Seeds
Method:
- Combine mince, red onion, garlic, mint, cumin, oregano, paprika, cinnamon, salt and pepper in a bowl. Divide mixture amongst skewers, using your hands to create a kebab shape on each skewer.
- Heat a frying/grill pan and coat with oil. Place skewers and cook, rotating until all sides are browned.
- Meanwhile, combine slaw ingredients and set aside.
- Serve skewers topped with tzatziki alongside salad, pita bread and lime wedges.
