Crispy Salmon Bites with Honey Dijon Sauce

Ingredients:
- 300g Our Cow Wild Caught Sockeye Salmon
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper
- 1 cup panko bread crumbs
Honey Dijon sauce:
- ⅓ cup mayonnaise
- ½ tbsp dijon mustard
- ½ tbsp honey
- ½ tbsp lemon juice
- Pinch of salt
Cooking instructions:
- Remove the skin from the Our Cow Wild Caught Sockeye Salmon and cut into cubes. Add to a bowl with olive oil and seasonings and mix until all coated.
- Add the breadcrumbs to a plate and coat each piece of the salmon in them.
- Place the crumbed salmon in the air fryer (make sure you dont over crowd them) and spray generously with olive oil.
- Cook at 200°C for 6 minutes per side or until golden.
- In a small bowl, mix all ingredients for the sauce.
- Serve crispy salmon with the sauce and enjoy!
