Tomato, Garlic, and Basil Barramundi

Ingredients:

  • 4 x Our Cow Wild Caught Barramundi Fillets
  • Olive oil, for cooking 
  • 4 tomatoes, diced
  • 1 can (400g) butter beans 
  • Fresh basil leaves
  • Fresh parsley 
  • 2 tbsp olive oil
  • 1 tbsp garlic paste 
  • Salt and pepper 
  • 60 g butter
  • ½ cup chicken stock

To serve:

  • Rice
  • Fresh basil 
  • Parmesan cheese


Cooking instructions:

  1. In a bowl, combine the tomatoes, basil, parsley, garlic, olive oil, salt, and pepper. Set aside. 
  2. Add some olive oil to a frying pan and heat to medium-high. Pat the Our Cow Wild Caught Barramundi Fillets dry with a paper towel and season with salt and pepper. Cook for 5 minutes per side or until golden and cooked through. Set aside. 
  3. Melt butter in the frying pan, then add the tomato mixture. Mix and bring to a simmer. Add the chicken stock and let it simmer for 10 minutes or until it has thickened. 
  4. Add rice to serving bowls, top with the cooked barramundi, and spoon over the tomato and bean mixture along with the pan juices. Finish with fresh basil and Parmesan cheese.
