Tomato, Garlic, and Basil Barramundi

Ingredients:
- 4 x Our Cow Wild Caught Barramundi Fillets
- Olive oil, for cooking
- 4 tomatoes, diced
- 1 can (400g) butter beans
- Fresh basil leaves
- Fresh parsley
- 2 tbsp olive oil
- 1 tbsp garlic paste
- Salt and pepper
- 60 g butter
- ½ cup chicken stock
To serve:
- Rice
- Fresh basil
- Parmesan cheese
Cooking instructions:
- In a bowl, combine the tomatoes, basil, parsley, garlic, olive oil, salt, and pepper. Set aside.
- Add some olive oil to a frying pan and heat to medium-high. Pat the Our Cow Wild Caught Barramundi Fillets dry with a paper towel and season with salt and pepper. Cook for 5 minutes per side or until golden and cooked through. Set aside.
- Melt butter in the frying pan, then add the tomato mixture. Mix and bring to a simmer. Add the chicken stock and let it simmer for 10 minutes or until it has thickened.
- Add rice to serving bowls, top with the cooked barramundi, and spoon over the tomato and bean mixture along with the pan juices. Finish with fresh basil and Parmesan cheese.
