Ingredients:
Slow Cooker Beef Brisket
- 1.5kg Our Cow Grass Fed Beef Brisket
- 1 cup Beef Stock
- 2 tbsp tomato paste
- 1 tsp garlic salt
- 1 tsp onion powder
- Salt and pepper
- 2 tbsp brown sugar
Nachos
- Sour cream
- Grated cheese
- Corn chips
Guacamole
- 2 avocados
- Juice of ½ a lime
- Salt and pepper
Pico de Gallo:
- 2 tomatoes, diced
- ⅓ cup coriander, finely chopped
- ½ a red onion, diced
- 1 tbsp olive oil
- Juice of ½ a lime
- Salt and pepper
Cooking instructions:
- In a slow cooker, combine the beef stock, tomato paste, garlic salt, onion powder, brown sugar, salt, and pepper. Add the Our Cow Grass Fed Beef Brisket, ensuring it is coated in the sauce.
- Cook on low for 10 hours.
- Once cooked, use two forks to shred the brisket.
- In a bowl, combine all ingredients for the guacamole. In another bowl, combine all ingredients for the pico de gallo.
- Line a baking tray and add the corn chips. Top the corn chips with the pulled brisket and sprinkle generously with shredded cheese. Place under the grill for 5 minutes or until the cheese has melted.
- Top nachos with guacamole, pico de gallo, and sour cream
