Bacon and Cheese Breakfast Casserole

Ingredients:

  • Our Cow Free Range Wood Smoked Bacon
  • 6 eggs
  • 1 ¼ cup milk
  • Salt and pepper
  • 1 tsp garlic powder 
  • 1tsp onion powder 
  • 7 cups of bread, cut into cubes 
  • 2 cups of cheese 
  • Hot honey, to serve
  • Fresh parsley, to garnish 


Cooking instructions

  1. Preheat your oven to 180°C and lightly grease a baking dish.
  2. Cook the Our Cow Free Range Wood Smoked Bacon in a pan over medium heat until lightly browned and cooked through, then set aside.
  3. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  4. Add the bread, cooked bacon, and most of the cheese (reserve a small handful for the top) into the egg mixture. Gently mix until the bread is well coated.
  5. Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheese over the top.
  6. Bake for 25-30 minutes, or until the casserole is set in the centre and golden on top.
  7. Allow it to sit for a few minutes before serving, then finish with fresh parsley and a drizzle of hot honey. 
  8. Enjoy!
