Steak Fajita Pasta (Gluten Free)

Ingredients:
- 2 x Our Cow Grass Fed Eye Fillet Steaks
- Olive oil
- Flaky sea salt
- 240g gluten free pasta spirals, uncooked
- 1 tbsp olive oil
- 1 tbsp garlic paste
- 1 red capsicum
- 1 green capsicum
- 1 brown onion
- 1 red onion
- 200g cream cheese
- Parmesan cheese, to serve
Homemade fajita seasoning:
- ½ tsp chilli powder
- ½ tbsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp dried oregano
- Pinch of salt
Cooking instructions:
- Preheat your BBQ to medium-high. Generously season the Our Cow Grass Fed Eye Fillet Steaks with salt, pepper, and olive oil. Cook the steaks for 5 minutes, flip and cook for a further 4 minutes, or until the centre reaches 52°C for medium-rare (or cook to your liking).
- Remove the steak from the pan and rest for 5-10 minutes
- Cook pasta as per directions.
- Combine all ingredients for the fajita seasoning in a small bowl.
- Heat 1 tbsp olive oil in a large pan over medium heat. Add the garlic paste, sliced capsicum, and onions, and cook for 5-7 minutes until softened. Sprinkle the homemade fajita seasoning over the veggies and stir to coat evenly.
- Reduce the heat to low and add the cream cheese, stirring until it melts into a creamy sauce. Slice the rested steak into bite-sized pieces.
- Add the cooked pasta straight into the pan with the sauce, tossing until everything is well coated. Fold through the steak. Finish with a pinch of flaky sea salt and serve immediately.
