Steak Fajita Pasta (Gluten Free)

Ingredients:

  • 2 x Our Cow Grass Fed Eye Fillet Steaks
  • Olive oil
  • Flaky sea salt
  • 240g gluten free pasta spirals, uncooked 
  • 1 tbsp olive oil
  • 1 tbsp garlic paste 
  • 1 red capsicum
  • 1 green capsicum 
  • 1 brown onion
  • 1 red onion 
  • 200g cream cheese
  • Parmesan cheese, to serve

Homemade fajita seasoning:

  • ½ tsp chilli powder
  • ½ tbsp cumin
  • 1 tsp garlic powder 
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp dried oregano 
  • Pinch of salt 


Cooking instructions:

  1. Preheat your BBQ to medium-high. Generously season the Our Cow Grass Fed Eye Fillet Steaks with salt, pepper, and olive oil. Cook the steaks for 5 minutes, flip and cook for a further 4 minutes, or until the centre reaches 52°C for medium-rare (or cook to your liking). 
  2. Remove the steak from the pan and rest for 5-10 minutes
  3. Cook pasta as per directions. 
  4. Combine all ingredients for the fajita seasoning in a small bowl. 
  5. Heat 1 tbsp olive oil in a large pan over medium heat. Add the garlic paste, sliced capsicum, and onions, and cook for 5-7 minutes until softened. Sprinkle the homemade fajita seasoning over the veggies and stir to coat evenly.
  6. Reduce the heat to low and add the cream cheese, stirring until it melts into a creamy sauce. Slice the rested steak into bite-sized pieces.
  7. Add the cooked pasta straight into the pan with the sauce, tossing until everything is well coated. Fold through the steak. Finish with a pinch of flaky sea salt and serve immediately.
