Slow Cooker Herb and Garlic Lamb Forequarter Chops

Ingredients:
- 4 x Our Cow Grass Fed Lamb Forequarter Chops
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 onion, sliced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup beef or lamb broth
- 1 cup red wine (optional)
- Salt and pepper to taste
- 1 lemon, juiced and zested
Cooking Instructions:
- Season the Our Cow Grass Fed Lamb Forequarter Chops generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the lamb chops on both sides until browned, about 2-3 minutes per side. This step is optional but helps to develop a rich flavour.
- Place the sliced onion, carrots, and potatoes at the bottom of the slow cooker.
- In a small bowl, mix together the minced garlic, rosemary, thyme, parsley, lemon juice, and lemon zest.
- Place the seared lamb chops on top of the vegetables in the slow cooker. Pour the garlic and herb mixture over the lamb chops. Add the broth and red wine (if using) to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lamb is tender and the vegetables are cooked through.
- Once cooked, remove the lamb chops and vegetables from the slow cooker.
- Serve the lamb chops with the vegetables and spoon some of the cooking juices over the top for added flavour.
