Hannah’s Slow-Cooked Beef Massaman Curry

Ingredients
1 kg Our Cow Diced Grass Fed Beef
2 tbsp vegetable oil
1 onion, finely sliced
3 tbsp Massaman curry paste
400 ml coconut milk
2 cups beef stock
2 tbsp fish sauce
2 tbsp brown sugar
3 potatoes, peeled and cut into chunks
2 carrots, chopped into chunks
1 cinnamon stick
2 bay leaves
½ cup roasted peanuts (optional)
Steamed jasmine rice, to serve
Method
Heat oil in a large pan and sauté the onion until soft.
Add curry paste and cook for 1-2 minutes until fragrant.
Brown the beef in batches, then transfer everything to a slow cooker.
Stir in coconut milk, beef stock, fish sauce, sugar, potatoes, carrots, cinnamon stick, and bay leaves.
Cook on low for 6-8 hours (or high for 3-4 hours) until beef is meltingly tender.
Just before serving, stir through peanuts (if using).
Serve hot with jasmine rice and enjoy around the table with family.
