Hannah’s Slow-Cooked Beef Massaman Curry

Ingredients

  • 1 kg Our Cow Diced Grass Fed Beef
  • 2 tbsp vegetable oil
  • 1 onion, finely sliced
  • 3 tbsp Massaman curry paste
  • 400 ml coconut milk
  • 2 cups beef stock
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 3 potatoes, peeled and cut into chunks
  • 2 carrots, chopped into chunks
  • 1 cinnamon stick
  • 2 bay leaves
  • ½ cup roasted peanuts (optional)
  • Steamed jasmine rice, to serve

Method

  1. Heat oil in a large pan and sauté the onion until soft.
  2. Add curry paste and cook for 1-2 minutes until fragrant.
  3. Brown the beef in batches, then transfer everything to a slow cooker.
  4. Stir in coconut milk, beef stock, fish sauce, sugar, potatoes, carrots, cinnamon stick, and bay leaves.
  5. Cook on low for 6-8 hours (or high for 3-4 hours) until beef is meltingly tender.
  6. Just before serving, stir through peanuts (if using).
  7. Serve hot with jasmine rice and enjoy around the table with family.
