Ingredients

We’ve broken things down to keep it extra simple. 

Dressing

  • 2 tablespoons minced lemongrass, remove the tough outer leaves and slice the tender white core
  • 1 jalapeno halved
  • 1 lime juiced
  • 1 clove garlic
  • 1 1/2 tablespoons fish sauce
  • 1 1/4 teaspoons brown sugar
  • 1/4 teaspoon red chili flakes

Beef

  • 1 1-inch thick strip steak 300g
  • 1/2 tablespoon vegetable oil
  • 1/4 cup fresh mint leaves loosely packed, roughly chopped
  • 3 tablespoons roughly chopped cilantro leaves and stems
  • 2 medium shallots thinly sliced

Rice powder

  • 2 tablespoons uncooked rice

Serving

  • Cherry tomatoes halved
  • Lettuce of your choosing

Method

  • Let’s start with the dressing.

Mince garlic together with one of the chili halves and place in a bowl. Chop the leftover chili into thin rings and add to the bowl, along with the fish sauce, brown sugar, lemongrass, lime juice and red chili flakes. Tinker according to taste by adding extra sugar, fish sauce and lime juice as required. Stir thoroughly and leave to one side. 

  • Now for the rice powder.

Add rice to a small frying pan and heat over medium. Cook, stirring regularly until the grains are golden and toasted, approx 10 minutes. Allow to cool for several minutes and then grind into a rough powder using a spice grinder. You can also use a mortar and pestle. 

  • And finally the steak.

In a skillet, heat oil over a medium to high heat. Sear the steak until it is browned on one side, approx 5-6 minutes. Flip and cook the second side until it is dark brown and the meat is medium rare, about 5-6 more minutes. Remove and place on a cutting board, allow to rest for 5 minutes. Thinly slice the steak. Combine the beef (and juices), mint, shallots and cilantro in a medium sized bowl. Pour the dressing over the top and toss gently. Add ground toasted rice and toss well.
